Summer’s been a scorcher!

If you’re health conscious like me, just any old thirst-quencher isn’t going to do. Don’t waste your chill-time searching. DIY instead!

This Ginger Cantaloupe Popsicle recipe, sent to us this week from sustainable meal delivery company Terra’s Kitchen is a healthy, refreshing, fruit-filled treat and guaranteed to satisfy your sweet tooth.  The best part is that these icy snacks are guilt-free!  And bonus, we found a super recommendation for  BPA-free popsicle molds.

What you need:

3 slices of fresh ginger

1/4 cup sugar (You can use any sugar substitute as long as it can melt)

1 ripe cantaloupe

Sliced strawberries (optional)

Popsicle forms and popsicle sticks

What to do:

  1. In a small sauce pan, add the sugar and 1/2 cup water over medium heat. Cook just until the sugar has melted. Remove from heat and drop in ginger. Set aside until cooled. (Remove ginger when ready to use!)
  2. Slice cantaloupe in half and scoop out seeds. Spoon cantaloupe flesh into a blender. Blend until smooth.
  3. Add just enough of the cooled ginger syrup to sweeten as desired. Save the remaining syrup for another use.
  4. Pour into popsicle molds and freeze overnight. For a variation, push a few sliced strawberries down into the popsicle molds before freezing.
